Infamous Rice Krispie Bars and Waterfights

Dad waterfightEvery time I visit my family in good ‘ol Scandanavian country in Minnesota, I am reminded of so many things; how much my family means to me, how much fun they are to hang around with, how great my Dad looks at 65 in slush boots and shorts (white legs aglow) with a high-powered water gun slung around his shoulder, and, most of all… how damn good these Rice Krispie bars are.  Honey, if I gained a few pounds while I was away, forgive me.  I have no will power when it comes to these luscious, peanut buttery slabs topped with caffeine-ridden, chocolaty goodness.

  • 6 Cups Rice Krispies (you can use the fake ones, but…)
  • 1 Cup Peanut Butter
  • 1 Cup Karo Syrup (NOT the lowfat kind, unless you want soggy bars)
  • 1/2 – 1 Cup Sugar (I tend towards the lesser end)
  • 2 Large Hershey’s Chocolate Bars

Start melting the chocolate bars.  A double boiler is my method of choice.  Meanwhile, warm the peanut butter, Karo syrup, and sugar to aid in mixing.  Add the Rice Krispies.

Put the Rice Krispie mixture in a jelly roll pan, otherwise known as a large baking sheet.  Pat down until firm.  Spread the melted chocolate bars over the top.  Place in fridge to cool.  Once firm, remove the pan, cut, and enjoy.  I, personally, like to continue to store in the fridge so they remain cool and refreshing.  Yes, people.  Chocolate, peanut butter, and sugar can be cool and refreshing, trust me on this one.

Do you have a favorite family treat?
