Had a great Father’s Day BBQ yesterday. The following recipe got rave reviews, so I thought I’d share. We had tried something similar at a friend’s and, instead of simply calling them for the recipe (that’s too easy), I decided to try my own rendition. Enjoy!
3/4 – 1 Can Pineapple (crushed, minus the juice)
1/2 Red onion diced
Pinch of crushed garlic (or a sprinkle of garlic powder)
Sprinkle of cayenne pepper

1/4 C Salad oil
1/8 C Red wine vinegar
1/8 C Balsamic vinegar
2 Tablespoons sugar
1/2 Lime (juice)
Few sprigs of Cilantro
——-
Mix main ingredients together (black beans, pineapple, etc.). Use a small food processor or blender to mix up the dressing. Chill and serve with tortilla chips! It makes an excellent topping for nachos too.
