Thanksgiving Recipes

A couple of my favorite holiday sides.  Enjoy!!

Apple Stuffing

1/2  C. Butter
1 Can apple pie filling (make your own if you want, but why?)
1/2 C. Diced onions
1/4 C. Seedless raisins
3 T. Honey
2 T. Nuts
1 C. Water
1 Pkg. Herb-seasoned stuffing mix (again, make your own if you want, but why?)

Melt butter in skillet.  Stir in apples, onions, raisins, and honey.  Saute.  Add remaining ingredients and stir. Stuff your bird!  This could also be heated in the oven, but if your oven is as full as mine when cooking Thanksgiving dinner… just put it in the bird, trust me.


Fancy Mashed Potatoes

2 lbs. Potatoes
1 Clove Garlic
1/2 C. Green onion, chopped
2 T. Butter
4 oz. Cream cheese
4 oz. Brie or Camembert cheese
1/2 C. Half & Half
Salt and Pepper to taste

Mix together and toss in the oven (at whatever temperature is convenient since this will be cozying up to your green been casserole and sweet potatoes) until heated through.  Note: these are best the first time around, but no worries… you won’t have any leftover.
